- Sift flour in a bowl. (I used cake flour but you may also use the all purpose flour)
- On a separate bowl, combine egg, butter, sugar and vanilla using an electric mixer on high speed until it is light and fluffy. Gradually add flour and mix on low speed. Do not over mix.
- Put lard in the cake pan. This is to avoid the cake from sticking to the pan when it's cooked already.
- Cook for 15 mins or so. It's cooked when you insert a toothpick at the center and it comes out clean.
Mix 1 cup confectioner's sugar, butter and 1 tsp coffee powder.
*I didn't use the electric mixer to combine so it looks a bit lumpy and the coffee didn't blend so well. Yet, nothing to worry about. It will still taste the same.
